Intel Mac installs fixed
On Intel Macs, uvx intervals-icu-mcp failed while compiling cryptography, which needs Rust, OpenSSL and pkg-config. Since 49.0.0 that library ships prebuilt wheels only for Apple Silicon. On Intel macOS the server now caps it below 49, so it installs from a wheel with no compiler. Other platforms are unchanged. The advisories against cryptography 48.x cover code this server never calls.
The README now also lists uv's official installer, because Homebrew no longer installs on Intel Macs.
