v1.8.1 - Fix Auto-Updater Version Detection

Version numbers now properly embedded in release artifacts
Auto-updater will correctly detect v1.8.1 as newer than v1.7.0
Previous v1.8.0 release had v1.7.0 embedded in binary, breaking update detection

This release ensures users with v1.7.0 installed will see the update prompt and can upgrade to v1.8.1 with the lazy-loading MCP gateway features.
