Type Compatibility Error: Fixed MyPy type checking error in sensor platform
- Problem: gather_entities function had incompatible type annotations causing MyPy errors
- Solution: Updated return type from list[EconetSensor] to list[SensorEntity] to accommodate all sensor types
- Impact: Resolves type compatibility issues with MixerSensor, LambdaSensors, and EcoSterSensor entities
- Files Modified: custom_components/econet300/sensor.py
- Technical Details: Changed function signature to use base SensorEntity type instead of specific EconetSensor type

Type Safety: Improved type annotations for better code maintainability
- Before: Function expected only EconetSensor entities but was receiving mixed sensor types
- After: Function properly handles all sensor entity types through base class inheritance
- Benefits: Better type safety, cleaner code, and proper MyPy compliance
