Added

• Add analytics metrics for Sail Operator components
  Introduce custom metrics that help measure Istio version counts, ZTunnel version counts,
  managed namespace counts etc.

• Add Istio 1.31.3, 1.30.7 and 1.29.10 support

• Add monitoring controller for Istio metrics
  Creates Prometheus Operator ServiceMonitor and PodMonitor resources when the
  Istio CR is annotated with sailoperator.io/monitoring: enabled, so control-plane
  and sidecar proxy metrics can be scraped without manual Prometheus config.

Changed

• Fix kube-prometheus-stack install in monitoring e2e on KinD
  KinD setup pre-applies only the ServiceMonitor CRD for OLM metrics. Remove it
  before installing kube-prometheus-stack when the Prometheus CRD is absent so
  Helm 4 server-side apply can install the chart CRDs without field-manager conflicts.
