• Support QUIC for Nimbus
• Replace Bloxroute max-profit relay, which has been shut down, with regulated, during ./ethd config. Eth Docker will not touch the relays you already have
  configured; adjust those yourself
• Add custom EL_NODE_TYPE. Uses the client default for database layout, sync mode and expiry, and let's you adjust those via EL_EXTRAS
• On RiscV, offer Ethrex during ./ethd config
• Source builds for Prysm, Erigon and MEV Boost use Go 1.27
