v0.19.3 - Move to GitHub, dependency updates and maintenance

⚠️ Warning:

Endurain has moved from Codeberg to GitHub. The container image is now published to the GitHub Container Registry. Update your docker-compose.yml to use the new image: ghcr.io/endurain-project/endurain:latest (replaces codeberg.org/endurain-project/endurain:latest). Existing images on Codeberg will not receive new releases.
Issues, pull requests and discussions are now on GitHub: https://github.com/endurain-project/endurain

Moved the repository, issues and pull requests to GitHub. A read-only mirror is kept on GitLab (#800).
Docker images are now built and published to ghcr.io/endurain-project/endurain, with amd64 and arm64 built on native runners and combined into multi-arch manifests (#800).
Moved CI from Forgejo to GitHub Actions: documentation deploy to GitHub Pages, backend and frontend linting, backend tests, OpenAPI types drift check, Conventional Commits validation, and a repository mirror to GitLab (#800).
Moved issue templates and the pull request template to .github/ (#800).
Removed the Renovate configuration along with the Forgejo workflows (#800).
The in-app update check now uses the GitHub releases API, and the default CSP connect-src now allows https://api.github.com instead of https://codeberg.org (#800).
Updated email templates (repository link and logo URL), the app footer, the settings view, the README badges and links, and the docs, mkdocs and Docker Compose examples to point to GitHub (#800).

Updated frontend dependencies to their latest versions, including the major upgrades to Vitest 5 and vite-plugin-pwa 2.

Confirmed all GitHub Actions are at their latest releases and pinned to full commit hashes.

Added CodeGraph setup instructions.
Updated CONTRIBUTING and the getting-started, bare-metal and developer-guide docs for the move to GitHub (#800).
