Fix: Wrong version displayed at startup

Fixes #50

Bug Fixes

• Wrong version at startup: apps/api/package.json and workspace packages were not committed as part of the v2.1.4 tag due to npm version --workspaces leaving workspace files unstaged. The startup banner and /health endpoint now correctly show the image version.
