feat: Add Jellyfin 12 compatibility (#110):

Adds Jellyfin 12.0 support while still supporting Jellyfin 10.10 and 10.11.

• Adds the net10.0 target using the Jellyfin 12.0.0-rc5 packages.
• Updates alternate-version and playlist handling for the Jellyfin 12 APIs.
• Produces separate packages for Jellyfin 10.10, 10.11, and 12.
• Hardens the multi-target release workflow.

All three targets build and package fine. I have been using this branch on Jellyfin 12 RC5 since its release without any problems.
